Tim and I returned from our mini getaway to Woodstock final Tuesday and are already again to our dreadful loopy routines.
The journey was brief but wonderful and left us in need of a few more. We ate much of nice meals – extra on that on a destiny submit -, rested and even did just a bit exploring of the woods with our puppy Lola.

4lbs chuck roast, quartered

2 celery stalks, diced

1 (28oz) can overwhelmed tomatoes (San Marzano is best!)
2 cups red meat stock
2 sprigs recent Rosemary
1 sprig recent sage
5 sprigs recent thyme
1lbs Gemelli pasta, cooked according to instructions
Chopped parsley to serve
Freshly grated Parmigiano Reggiano to serve

INSTRUCTIONS
Preheat oven to 325 degrees.
Season the meat with salt and pepper.
Heat the olive oil on a wide oven-proof Dutch oven over medium excessive heat. When the oil is scorching hot, brown the meat on all sides, about 5 minutes, operating in batches if necessary. Remove the meat from the pot and reserve.
