I may devour Mexican Food each day of the week! Come to assume of it, I possibly DO devour a few most days. And I love to share my favourite recipes with you. Seriously. And this one, well, it’s certainly one of my favorites. One factor I REALLY like about this recipe? Well, I like making those Fast & Easy Chicken Fajitas one night, then Quesadillas with the leftovers. Kind of makes my NULL evenings appear simpler to have leftovers that work so easily. Like making spaghetti one evening time after which a spaghetti casserole the next. Only for Mexican food. Heh.

FAST & EASY CHICKEN FAJITAS


YIELD: 2 -4 SERVINGS
CHICKEN FAJITAS {GLUTEN FREE}

INGREDIENTS:
  • 4 Boneless, Skinless Chicken Breast halves (fresh or frozen and thawed), sliced
  • 8 ounces Fresh White Mushrooms, sliced
  • 1 Bell Pepper, or use a mixture of red, green, and yellow
  • 1 small Onion, sliced
  • 1 teaspoon Garlic, minced
  • 1/2 teaspoon Ground Cumin
  • 1/4 teaspoon Sea Salt
  • 1/2 teaspoon Lemon Pepper
  • 1/2 teaspoon Chili Powder
  • 1/4 cup Canola Oil
  • 1 small Lemon, juiced
  • 1 dozen Gluten-Free Tortillas


INSTRUCTIONS:
  1. Wash, and utilizing a paper towel, pat dry the Boneless, Skinless Chicken Breast halves. Place every breast half on a slicing board, and cut into strips about 1/2-inch wide.
  2. Sprinkle chook strips with Ground Cumin, Sea Salt, Lemon Pepper, and Chili Powder. Toss to distribute spices evenly.
  3. Pour the Canola Oil In your Fajita Skillet, over medium heat. When the skillet is warm, upload the seasoned chook strips.
  4. Cut the Bell Pepper into strips and upload to the skillet.
  5. Slice the Onion and upload to the skillet.
  6. Wash the Mushrooms, take away the stems, and slice the caps (the stems will be discarded). Add to the skillet.
  7. Continue to prepare dinner over medium heat, till the chook is cooked through.
  8. Prior to serving, drizzle the juice of 1 lemon over the whole mixture.
  9. Serve with garnishes of shredded cheese, sour cream, salsa.
  10. Great part dishes include: Easy Guacamole Dip, Easy Tex-Mex Rice
